Dominant Flavours: Creamy, dense and smooth. A deep seeded nuttiness with hints of caramel and sweet cream. A lovely earthiness towards the rind.
Description: Challerhocker is made by Walter Rass, (a pioneer in the cheese making world), who has created beautiful hybrid cheeses using traditional old world cheese making methods combined with new and creative techniques. The Challerhocker is aged longer then an appenzeller and washed with wine and herbs as it ages. This give it a unique and complex flavour, reminiscent of leeks and cream.
Pairing notes: Divine paired with traditional UK best bitters like the Arkell or the Special Pale Ale. Equally delightful with a complex earthy dark ale like the Iron Duke or the Terrestrial Nut Brown Ale.
