Description: The Comte has been made in the heart of the Jura Mountain in France for over eight centuries. This cheese is one of France’s most popular and protected cheeses. And for good reason. This name protected cheese is made by several different producers, but Charles Arnaud creates an exceptional version. This Comte is cave-aged in the iconic Fort des Rousses (one of Napoleon’s old forts), for 18 months and lovingly cared for. The flavours are beyond compare. Sweet, floral, toasted nuts and earth abound. The finish is super complex with a well executed sharpness. 

Pairing notes: The Comte pairs with many beers and the more complex the better. Our favourite is the Arkell Best Bitter. The malty nuttiness in the beer brings out fruity and nutty components in the cheese. Also try the Comte with our Sun Stands Still for a completely different experience. Dark fruit flavours in the cheese and this fizzy dark sour abound. Equally wonderful with our County Brown Ale  a luxurious, rich chocolatey brown ale meets a a sharp complex alpine cheese
